We lived with a lady in Manzini for a short time and she made these tortillas regularly and did we enjoy them!
3 cups of whole grain Flour
½ cup cold pressed extra virgin Olive Oil
1 tsp aluminium free Baking Powder
½ tsp Celtic Sea Salt
1 cup warm distilled water
Mix all ingredients together, knead until smooth and elastic. Divide into 13 balls. Cover and let sit for 30 min. roll out into thin round discs, cook in ungreased pan over medium heat, flip once. Done when light brown spots appear. Reheat in ungreased frying pan before serving. Can be served with guacamole and chopped salad, or with your favourite leftovers, or with hummus, tomato and other veggies, or with mashed avocado and other raw veggies of your choice. Can also be used cut into ¼s as a side dish to a main meal.
